Really cool post processing or gimmick?
A popular post processing technique is hdr-esque portraits/composites. There are some really excellent retouchers who do a great job at this (I wish I could do half as well as them!) and others that use it as a gimmick...love it or hate it, it's popular and there is some really cool work out there.
The key steps for me are fill light, dodge/burn (aka carving), desaturation and depending on the style layer overlays of high pass, b/w, embossing, etc. There's several other steps involved but this seem to be pretty common. As with most Photoshop work there are multiple ways to get to the same result.
Some of the techniques I use I've picked up from Amy Dresser, Glyn Dewis and Joel Grimes. Lots of great information at http://www.retouchpro.com.
This pic was based on some Glyn Dewis steps and then I used multiple overlays, Silver Efex for a high structure layer overlay, a standard PS emboss filter layer overlay. These types of overlay layers give the pop (high contrast) look to image. Below are couple other attempts...

Rough composite using Joel Grimes techniques, just not as heavy. Obviously some glaring issues, but I'm doing this for fun...not a paycheck :-)
Want to revisit this one...basically a quick post following steps in Joel Grimes video, but again, not as heavy. Want to redo using more a Glyn Dewis style. Not really my thing, fantasy art, but definitely fun!
